Mind you I'm in Texas so no seafood fest here, does anyone have any good superbowl food ideas to share? Since I'm in healthy eating workout mode I'll have to healhty-fy anything that I make but I'm pretty good at doing that.

Last night was healthy pizza-premade thin crust, a little low cal sauce, turkey pepperoni diced and sprinkled, bell pepper and onion diced and sprinkled heavily, pepperoncini rings and no cheese for me-still quite tasty if I say so myself!

I'll take either, I'm pretty good at turning unhealthy foods into healthy food but nothing full of butter, sour cream or cheese-those don't translate well into healthy!!!

I did walk/jog 4 miles this morning and did an hour cardio blast class this evening though!

I just posted a recipe for Pickles in a Blanket. A simple recipe and you can substitute low fat or fat free cream cheese to reduce fat and calories. Enjoy!:wave:

A bunch of chefs on TV are advocating marinated flank or hanger steak as the base for fajitas.

I'm being lazy because we're not having a party. Doing my no-brainer Mexican dip (recipe below) with lowfat cheeses, served with chips plus romaine for a pseudo taco salad. Picking up "wangs" (that's Buffalo chicken wings) somewhere. Lazy. And making brownies.


Becky?s Easy Mexican Dip


This recipe is from a dear friend. The first time I served this dish, someone told me that he couldn?t go on living unless he got the recipe. I was embarrassed to give it to him because it is so easy.

1 (8-ounce) package cream cheese, softened
1 can of chili, preferably Old El Paso
1 to 2 cups shredded cheddar cheese
2 green onions, chopped

Spread cream cheese in bottom of pie plate. Pour chili on top. Sprinkle with cheese and garnish with green onions. Bake at 350 degrees until bubbly, about 20 minutes. Serve with tortilla chips. Serves 6 as an appetizer.

I think I'm going Italianish: picked up light cheese ravioli to cook and then marinate in light Northern Italian light dressing, hummus with pita and chips, homemade pizza with premade thin crust so I can go heavy on veggies and light on cheese and turkey pepperoni and maybe light garlic cheese bread sticks (outta diet bread, FF spray butter and 2% Italian cheese blend) with marinara for dipping-if we went up having company. Of course we'll have some chips and salsa because we are Texans!!!

Every year, the food at our party attempts to somehow be representative of the two teams playing. Last year was cajun food and breaded pork tenderloin sandwiches. One year when the Chicago Bears were playing we did Chicago dogs and chili made with real bear meat.

The cities of both Green Bay and Pittsburgh have fairly heavy northern/eastern European influences on their food, so we will be having grilled bratwursts & kielbasas , sauerkraut and pierogies.

We've spent most of the week making pierogies and now have around 130 to show for our efforts.

I doubt that any of it would be considered healthy.
