Objective:

Support in assistance with all opening, closing, and day to day operations under the Chef de Cuisine’s direction all the while providing Fonville Press Market and Cafe’s kitchen staff with consistently strong direction; enable a high-quality kitchen environment through excellent leadership ensuring all BOH staff perform their duties to company standards.

Skills and Qualifications:
  • Intermediate Culinary Skills
  • Ability to effectively manage the kitchen staff, motivate them and assign duties fairly
  • Thorough knowledge of health and safety standards
  • Proficient in Microsoft Office, Excel, Point of Sale or similar restaurant management software
  • Advanced verbal and written communication skills
  • Attention to detail and organizational skills
Responsibilities:
  • Manage all activities in the kitchen, including food preparation, production, management and training of kitchen staff.
  • Assist with ordering supplies to stock inventory appropriately while ensuring efficient, cost-effective operation and profitability of food production.
  • Supervise and inspect all preparation and cooking equipment on a regular basis to ensure that they are kept sanitary, and in excellent operating condition.
  • Monitor holding and storage operations; stocking and food rotation, and in compliance with food service sanitation standards.
  • Establish superlative rapport. Assess staff’s performance as well as effectively discipline underperforming staff members, as well as motivating team to go above and beyond the expectations of their particular kitchen roles; resourcefully solve issues that arise and seize control of any problematic situation.
  • Recruit and train new kitchen employees to help the restaurant reach its daily goals
