A simple fall dinner party menu that incorporates lots of technique including braising and roasting is the focus of this class. We’ll start with a salad of Romaine Hearts with Oven Roasted Tomatoes, Toasted Corn and Applewood Smoked Bacon with a Blue Cheese Vinaigrette; a hearty French Coq au Vin (Chicken in Red Wine); Smoky Mushroom Risotto and Black Velvet Cake with Bing Cherry Red Wine reduction.
GUMBO YA YA! TURKEY AND ANDOUILLE GUMBO $38

It's just not Thanksgiving without it! This is a truly rich, hearty gumbo made with your leftover turkey carcass (or chicken) and Andouille (or other smoked sausage) and it's so easy! Perfect to freeze for winter warm ups. To enjoy with the gumbo we'll cook some Basmati Rice and bake some easy Homemade French Bread.

Traditional Holiday menus are fabulous but when you live on the coast and have access to all our wonderful seafood it’s fun to think untraditional and take advantage of the bounty. In this class we’ll make some Seafood “Starters”, simple and delicious dishes you may want to incorporate in your Holiday menus. We’ll start with a Shrimp Remoulade; Marinated Blue Crab Claws; Seafood Gratin; Oyster and Artichoke Soup.

It's soup weather again, and Chef Jekyll is back to demonstrate two of his most popular soup recipes. Come and join us as we learn to prepare Jekyll's Smoked Sockeye Chowder and a superb Cream of Potato Soup with Bacon and Asparagus Tips. We will also have Cheesy Crab Bruschetta.

We’ll make a Marinated Tomato and Artichoke Salad with Romaine Lettuce and Poached Garlic Vinaigrette; Panéed Fish (Snapper, Trigger or Grouper) Mediterranean with Red Bell Pepper, Green Onion, Calamata Olives, and Feta Cheese over Pasta; Greek Spiced Walnut Cake with Vanilla Bean Paste Chantilly Cream.
